Zephyr is an air confectionery product that is beaten to a porous, airy consistency. Assortment of marshmallows is very large: it is made with vanilla, fruit, caramel, gives it a taste of filling, glaze, etc. The process of preparing marshmallows is a simple process, and dessert is delicious, easy and useful.
- Sugar - 4 glass;
- Gelatin - 2;
- Citric acid - 1 tsp;
- Soda - 0,5 tsp
Dilute gelatin (2 st.l with up to 100 g of water).
In the saucepan add sugar, pour a glass of cold water and put on medium heat. Be sure to stir so that the sugar is completely dissolved.
When sweet water boils - add the previously diluted gelatin. Cut 3 minutes, then remove the pan from the fire and mix everything thoroughly until the gelatin is completely dissolved.
Allow the liquid to cool slightly, but only a little, it is necessary to whip the consistency in a hot state.
With a mixer, whip the hot liquid at medium speed. Beat for about 5 minutes, and then let it sit a little (about minutes 5) and repeat whipping again for 5 minutes.
Add the citric acid and soda.
Again whip the consistency, but this time with a whisk and by hand. Beat it for about 10 minutes, then let the consistency stand for 20 minutes. The zephyr mass should increase approximately twice.
Prepare trays and cutting boards (preferably from plastic). Cutting board moistened with water and put on it marshmallow mass in the form of small flat cakes or pyramids.
When the cakes have hardened, carefully remove them with a thin knife and glue in pairs. Put on a tray, decorate a little with fruit (sprinkle with grated chocolate) and serve to the table.
